Snow Day???

We just had a weekend of beautiful weather - a teaser for the hopes of Spring. Today we woke up to a little snow. Maybe an inch. The school district must have wanted an extra day off, because they cancelled school. It was ok by me to have a lazy morning and not have to rush out to meet the bus. We made the best of the day starting with a yummy breakfast!
Chocolate Chip muffins from scratch! And they were YUMMY! I saw this recipe in a Taste of Home cookbook I have and wanted to try it. Perfect day to do so. I put the recipe at the end of this post. It's easy and good!
After breakfast we geared up and met our neighbor friends outside for some fun. Even though there was only an inch, it made for good sledding fun on the golf course near our house!

Chocolate Chip Muffins:
  • 1-1/2 cups all-purpose flour
  • 2/3 cup sugar
  • 3/4 teaspoon baking powder
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 egg
  • 1 cup (8 ounces) sour cream
  • 5 tablespoons butter, melted
  • 1 teaspoon vanilla extract
  • 3/4 cup semisweet chocolate chips
  • Directions:
  • 1. In a large bowl, combine the flour, sugar, baking powder, baking soda and salt. Combine the egg, sour cream, butter and vanilla. Stir into dry ingredients just until moistened. The batter will be thick. Fold in chips.
  • 2. Fill greased or paoer-lined muffin cups 3/4 full. Bake at 350 degrees for 18-20 minutes or until a toothpick comes out clean. Cool for 5 min before removing. Yield 1 dozen muffins.
